Enid’s Crunchies

2 cups rolled organic oats
1 cup dessicated coconut
1 cup organic plain (cake) flour
1 cup granulated sugar
1 cup organic butter
1 1/2 Tablespoons golden syrup
1 teaspoon bicarbonate of soda
In a pot slowly melt the butter and sugar
Add the bicarb and the syrup and stir ’til incorporated
Mix the dry ingredients
Pour the butter mix into the oats and mix well
Press into an oven proof pie dish and bake @180*C (pre-heated oven) for 20 minutes
That’s it. When you take them out you may find the tray of oats is soft and wobbly in the centre. It firms up as it cools. Crunchies are meant to be chewy, if you would like them more crisp, give them another 5 minutes in the oven. Cut while they are still slightly warm and store, like biscuits, in an airtight container.

This is always a family favorite for us - a true SA recipe.
