Lavender Langues du Chat

These little Cat’s Tongues are crisp, delicate, and the perfect accompaniment to sorbets and fruit ices.
Cream together

100g unsalted butter
100g lavender infused caster sugar

When it is light and fluffy beat in gradually

3 egg whites, lightly beaten to loosen

Fold in

100g plain flour
1 teaspoon lavender flowers

Spoon into a paper piping cone and snip off a 1 cm wide [...]

Sour Apple Sorbet

Core and chop

500g granny smith apples, skin on

and simmer briefly with

150g of caster sugar (you could use lavender infused sugar here)
150ml water

Once the fruit is just softened blitz in a blender with

250ml fresh pressed apple juice
150ml water

Churn in an ice cream machine and five minutes from the end, add
