Hot Spiced Apples

Apples are the perfect panacea, they refresh you when you are thirsty, take the edge off when you need a snack and make you feel better when you are ill. One of my favourite ways to cook and serve them stems back to my childhood when my mom would peel and slice them, and braise them with spices.

  • Peel and deseed your apples, one or two per person, and slice into segments.
  • place in a pot with a dash of water.
  • Put a lid on the pot and braise very gently until soft.
  • Serve with natural yoghurt, fresh cream or mascarpone.

There are several variations depending on how sweet and juicy your apples are

  • Add a spoonful of brown sugar and a small quill of cinnamon, and a knob of butter. This will make it’s own fudgy apple sauce to swirl into the yoghurt
  • Add some honey and a little fresh thyme
  • Add a splash of apple juice and a piece of star anise
  • Add some orange zest and a clove with a little sugar and butter.

The possibilities are endless and the apples make a great cleanser, treat, breakfast or dessert

    Hmmm. I was just thinking of making a big pot of applesauce this weekend. mY ultimate comfort food.
